Lime Cilantro Beef

The nice thing about this recipe is that you can use whatever kind of beef you like or find on sale. Flank steak, a roast, etc.
5 tbsp minced garlic
1/4 cup fresh cilantro
1/4 cup lime juice
1 tbsp olive oil
1 tbsp cumin
1 tbsp coriander
1 large piece of beef of your choice.

Pour lime juice & olive oil over beef. Cover beef with garlic & spices. Flip the beef on your platter to get juice, garlic & spices on bottom & flip beef back. Cover with plastic wrap & let marinate in fridge for about 3 hours or so. When you're ready you can either grill this or place in oven. I prefer grilling. You can serve this up as a beef taco with fixings or you can serve with salad & roasted potatoes!
