Taco Chicken & Potatoes:
4 boneless skinless chicken breasts, diced
6 large red potatoes, peeled and sliced
1 pkg. reduced sodium taco seasoning
1/2 cup salsa
1 1/2 cups shredded cheddar cheese
Peel and slice your potatoes. Layer them in a round casserole dish. Place chicken on top of the potatoes. Add taco seasoning, then salsa and top with the cheese. Bake at 350 degrees for 1 hour until potatoes are fork tender.
